Ingredients

The crust

  • 2 cups blanched almond flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 teaspoon Italian Seasoning
  • 2 large eggs, beaten
  • cup melted butter
  • cup shredded cheddar cheese

The filling

  • 1 teaspoon olive oil
  • ¼ cup chopped onions
  • 1 pound skinless chicken breast, cut into cubes
  • salt and pepper to taste
  • 1 teaspoon chicken seasoning or chicken rub
  • ¼ cup chopped celery
  • 1 cup fresh, chopped green beans
  • 1 cup chopped cauliflower florets
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • ½ cup heavy whipping cream
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon thyme
  • 1-2 tablespoons all-purpose flour

Instructions

  1. Preheat the oven to 400°F.
  2. In a large mixing bowl, combine almond flour, baking powder, Italian seasoning, and salt.
  3. Add melted butter and beaten eggs, then stir with a silicone spoon.
  4. Fold in the shredded cheese.
  5. In a cast iron skillet, heat olive oil and sauté onions until translucent.
  6. Add chicken cubes and cook until no longer pink.
  7. Stir in celery, green beans, cauliflower, and garlic, and sauté until soft.
  8. Add chicken broth, heavy cream, Italian seasoning, and thyme, then stir.
  9. Create a slurry with flour and some sauce from the skillet, then thicken the filling.
  10. Return the mixture to the skillet and cook until the sauce thickens.
  11. Spread the crust over the filling and bake for 15 minutes until golden brown.
  12. Cool before serving.
