Instructions
- Preheat the oven to 200C/400F and grease a large baking sheet.
- In a large mixing bowl, add all the vegetables and pour the olive oil over them.
- Add the Italian seasoning, salt, and pepper, then mix thoroughly to coat the vegetables.
- Transfer the vegetables to the greased baking sheet and roast for 35-40 minutes, flipping halfway through.
