Ingredients

The vegetables

  • 1 large sweet potato
  • 2 large carrots
  • 2 large potatoes
  • 1 beetroot

The seasonings

  • 2 tablespoons olive oil
  • teaspoons Italian seasoning
  • ½ teaspoon pepper
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 200C/400F and grease a large baking sheet.
  2. In a large mixing bowl, add all the vegetables and pour the olive oil over them.
  3. Add the Italian seasoning, salt, and pepper, then mix thoroughly to coat the vegetables.
  4. Transfer the vegetables to the greased baking sheet and roast for 35-40 minutes, flipping halfway through.
