Ingredients

The shrimp

  • 2 lbs shrimp, peeled and deveined

The aromatics

  • 1 medium shallot, diced
  • 3 cloves garlic, minced
  • 10 leaves basil, roughly chopped

The sauce

  • 1 can coconut milk (14 oz)
  • 2 tbsp red curry paste
  • 1 tbsp lemon juice
  • 1 tbsp fish sauce
  • 1 tsp dried ginger
  • 1 tsp tapioca starch

For cooking

  • 1 tbsp sesame oil

For topping (optional)

  • to taste chopped cilantro or basil
  • to taste red chili flakes

Instructions

  1. Prep the shallot, garlic, and basil, and set aside.
  2. Rinse the shrimp and pat dry to remove excess moisture.
  3. Mix the creamy coconut sauce ingredients in a bowl and whisk to combine.
  4. Heat a large pan over medium heat and add sesame oil.
  5. Add garlic and shallot to the pan and cook until softened.
  6. Pour the creamy coconut sauce into the pan and simmer until thickened.
  7. Add the shrimp and basil, stirring to combine, and cook until shrimp are fully cooked.
  8. Remove from heat and serve, topping with optional ingredients as desired.
