Ingredients

The sauce

  • 1 tablespoon vegetable oil
  • ½ brown onion coarsely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 teaspoons sambal asli (or sambal oelek or chili garlic sauce)
  • 1 teaspoon tomato sauce
  • ½ teaspoon turmeric
  • 200 ml coconut cream
  • 1 tablespoon fish sauce
  • ½ teaspoon sugar

The shrimp

  • 8 ounces large shrimp, peeled and deveined

For serving

  • 1 lime cut into wedges
  • 1 tablespoon cilantro leaves

Instructions

  1. Heat oil in a skillet over medium-high heat and sauté onion, garlic, and ginger until fragrant.
  2. Add sambal, tomato sauce, and turmeric; mix well.
  3. Stir in coconut cream, fish sauce, and sugar; let simmer until slightly thickened.
  4. Pat shrimp dry and add to the sauce, cooking until they turn pink and opaque.
  5. Serve immediately with lime wedges and cilantro on top.
