Ingredients

  • ½ cup unsweetened dairy free milk
  • 2 tablespoons apple cider vinegar
  • 1 cup oat flour
  • ¼ cup fine grained almond flour
  • 1 tablespoon baking powder
  • ¼ teaspoon sea salt
  • ¼ cup apple sauce
  • 2 teaspoons vanilla extract
  • 2 tablespoons maple syrup

Instructions

  1. Heat the pan or griddle until hot.
  2. Mix the dairy-free milk and apple cider vinegar, then set aside to create vegan buttermilk.
  3. In a bowl, whisk together the oat flour, almond flour, baking powder, and sea salt.
  4. Make a well in the dry ingredients and add the apple sauce, vanilla, maple syrup, and the milk/vinegar mixture. Mix until just combined.
  5. Let the batter sit for about 5 minutes.
  6. Drop large spoonfuls of batter onto the hot pan. Cook for about 4-5 minutes on each side until golden brown and bubbles form on top.
  7. Serve with your choice of toppings.
