Ingredients

  • 1 cup soy milk or any vegan milk
  • 2 teaspoons apple cider vinegar or lemon juice
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon sea salt
  • 1 tablespoon granulated sugar
  • 1 tablespoon vegan butter or oil
  • extra for greasing coconut oil or vegan butter

Instructions

  1. 1. Combine the soy milk and apple cider vinegar or lemon juice in a bowl and set aside for 5 minutes to create vegan buttermilk.
  2. 2. Sift together the flour, baking powder, and salt in a large bowl.
  3. 3. Add sugar, melted vegan butter or oil, and the buttermilk mixture to the dry ingredients and mix gently until just combined.
  4. 4. Heat a griddle or skillet over medium heat and grease it with coconut oil or vegan butter.
  5. 5. Pour about ¼ cup of batter for each pancake and cook until bubbles form on top, then flip and cook until golden brown.
  6. 6. Repeat with remaining batter and serve hot with maple syrup and your favorite toppings.
