Fluffy Homemade Vegan Pancakes

Instructions
- 1. Combine the soy milk and apple cider vinegar or lemon juice in a bowl and set aside for 5 minutes to create vegan buttermilk.
- 2. Sift together the flour, baking powder, and salt in a large bowl.
- 3. Add sugar, melted vegan butter or oil, and the buttermilk mixture to the dry ingredients and mix gently until just combined.
- 4. Heat a griddle or skillet over medium heat and grease it with coconut oil or vegan butter.
- 5. Pour about ¼ cup of batter for each pancake and cook until bubbles form on top, then flip and cook until golden brown.
- 6. Repeat with remaining batter and serve hot with maple syrup and your favorite toppings.
