Ingredients

The batter

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground flaxseeds
  • ¾ teaspoon salt
  • 2 cups unsweetened oat milk
  • 3 tablespoons coconut oil
  • 2 tablespoons fresh lemon juice

For serving

  • to taste vegan butter
  • to taste maple syrup
  • to taste fresh fruit

Instructions

  1. 1. In a large bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, ground flaxseeds, and salt.
  2. 2. In a separate bowl, whisk together the wet ingredients: oat milk, melted coconut oil, and lemon juice.
  3. 3. Make a well in the center of the dry mixture and pour in the wet mixture, stirring gently until just combined.
  4. 4. Heat a griddle or frying pan over medium-high heat, greasing if desired.
  5. 5. Pour approximately ¼ cup of batter onto the griddle for each pancake.
  6. 6. When bubbles form on the surface, flip the pancakes and brown the other side.
  7. 7. Repeat with the remaining batter to make about 8 pancakes.
  8. 8. Serve hot with vegan butter, maple syrup, or fresh fruit.
