Vegan Pancakes

Instructions
- 1. In a large bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, ground flaxseeds, and salt.
- 2. In a separate bowl, whisk together the wet ingredients: oat milk, melted coconut oil, and lemon juice.
- 3. Make a well in the center of the dry mixture and pour in the wet mixture, stirring gently until just combined.
- 4. Heat a griddle or frying pan over medium-high heat, greasing if desired.
- 5. Pour approximately ¼ cup of batter onto the griddle for each pancake.
- 6. When bubbles form on the surface, flip the pancakes and brown the other side.
- 7. Repeat with the remaining batter to make about 8 pancakes.
- 8. Serve hot with vegan butter, maple syrup, or fresh fruit.
