Ingredients

  • 3 tablespoons aquafaba
  • teaspoon cream of tartar
  • 1 cup oat flour
  • 3 to 4 tablespoons coconut sugar
  • 2 teaspoons baking powder
  • 1 tablespoon olive oil
  • cup water
  • teaspoon fine sea salt
  • 2 teaspoons apple cider vinegar

Instructions

  1. Preheat the oven to 350ºF or heat a skillet over medium-low heat.
  2. Whisk the aquafaba and cream of tartar in a bowl until foamy.
  3. Add oat flour, 3 tablespoons of coconut sugar, baking powder, olive oil, water, and salt to the bowl and stir until smooth.
  4. Stir in the apple cider vinegar last to enhance fluffiness.
  5. For baked pancakes, pour 1/4 cup of batter onto a lined baking sheet and bake for 8 to 10 minutes.
  6. For skillet pancakes, pour 1/4 cup of batter into the skillet, cook until bubbles form, then flip and cook for another 3 to 4 minutes.
  7. Serve warm with desired toppings.
