Vegan Oat Flour Pancakes

Instructions
- Preheat the oven to 350ºF or heat a skillet over medium-low heat.
- Whisk the aquafaba and cream of tartar in a bowl until foamy.
- Add oat flour, 3 tablespoons of coconut sugar, baking powder, olive oil, water, and salt to the bowl and stir until smooth.
- Stir in the apple cider vinegar last to enhance fluffiness.
- For baked pancakes, pour 1/4 cup of batter onto a lined baking sheet and bake for 8 to 10 minutes.
- For skillet pancakes, pour 1/4 cup of batter into the skillet, cook until bubbles form, then flip and cook for another 3 to 4 minutes.
- Serve warm with desired toppings.
