Instructions
- Make oat flour by processing rolled oats in a blender until fine, or use pre-packaged oat flour.
- In a medium bowl, whisk together the oat flour, baking powder, cinnamon, and salt.
- In a large bowl, mix the eggs, coconut milk, coconut oil, and vanilla extract, then combine with the dry ingredients.
- Heat a griddle pan over medium high heat, then lower to medium low. Pour ¼ cup of batter for each pancake.
- Cook pancakes for 1-2 minutes on each side, flipping when bubbles form on the surface. Serve with fruit and maple syrup.
