Ingredients

Dry Ingredients

  • 2 cups oat flour (or rolled oats to make oat flour)

Wet Ingredients

  • 2 large eggs
  • 1 ¼ cups coconut milk (or other non-dairy milk)
  • ¼ cup melted coconut oil (or other mild oil)
  • ½ tsp vanilla extract

Instructions

  1. Make oat flour by processing rolled oats in a blender until fine, or use pre-packaged oat flour.
  2. In a medium bowl, whisk together the oat flour, baking powder, cinnamon, and salt.
  3. In a large bowl, mix the eggs, coconut milk, coconut oil, and vanilla extract, then combine with the dry ingredients.
  4. Heat a griddle pan over medium high heat, then lower to medium low. Pour ¼ cup of batter for each pancake.
  5. Cook pancakes for 1-2 minutes on each side, flipping when bubbles form on the surface. Serve with fruit and maple syrup.
