Instructions
- Blend rolled oats in a high-speed blender until they turn into oat flour.
- Combine oat flour, baking powder, almond milk, eggs, coconut oil, and maple syrup in a bowl and mix well.
- Let the batter sit for 5 minutes to thicken.
- Heat a nonstick skillet over medium heat and pour about ¼ cup of batter for each pancake.
- Cook each pancake for about 3 minutes on each side until golden brown.
- Serve warm with your choice of toppings.
