Ingredients

The batter

  • cups uncooked rolled oats
  • 2 teaspoons baking powder
  • ¾ cup unsweetened almond milk
  • 2 large eggs
  • 1 tablespoon coconut oil
  • 1 tablespoon maple syrup

Toppings

  • to taste maple syrup
  • to taste berries
  • to taste whipped cream
  • to taste apple butter
  • to taste nut butter

Instructions

  1. Blend rolled oats in a high-speed blender until they turn into oat flour.
  2. Combine oat flour, baking powder, almond milk, eggs, coconut oil, and maple syrup in a bowl and mix well.
  3. Let the batter sit for 5 minutes to thicken.
  4. Heat a nonstick skillet over medium heat and pour about ¼ cup of batter for each pancake.
  5. Cook each pancake for about 3 minutes on each side until golden brown.
  6. Serve warm with your choice of toppings.
