Ingredients

The batter

  • ½ cup unsweetened almond milk
  • ½ cup whole milk Greek yogurt
  • 1 large egg
  • 2 tablespoons maple syrup
  • 1 tablespoon avocado oil
  • 1 teaspoon vanilla extract
  • 2 cups whole rolled oats
  • 2 teaspoons baking powder
  • ½ teaspoon cinnamon
  • ½ teaspoon sea salt

For serving

  • to taste fresh fruit
  • to taste maple syrup

Instructions

  1. Blend almond milk, yogurt, egg, maple syrup, avocado oil, vanilla, oats, baking powder, cinnamon, and salt until smooth.
  2. Pour the mixture into a bowl and stir to ensure it's well combined.
  3. Heat a nonstick skillet over medium-low heat and lightly brush with oil.
  4. Pour ⅓ cup of batter into the skillet for each pancake and cook for 1 to 2 minutes per side until golden brown.
  5. If the batter thickens, add 1 to 2 more tablespoons of almond milk to loosen it.
  6. Serve pancakes with maple syrup and fresh fruit.
