Instructions
- Blend almond milk, yogurt, egg, maple syrup, avocado oil, vanilla, oats, baking powder, cinnamon, and salt until smooth.
- Pour the mixture into a bowl and stir to ensure it's well combined.
- Heat a nonstick skillet over medium-low heat and lightly brush with oil.
- Pour ⅓ cup of batter into the skillet for each pancake and cook for 1 to 2 minutes per side until golden brown.
- If the batter thickens, add 1 to 2 more tablespoons of almond milk to loosen it.
- Serve pancakes with maple syrup and fresh fruit.
