Instructions
- Combine oat flour, baking powder, and salt in a large bowl.
- Add the egg, milk, maple syrup, vanilla extract, and lemon juice, and mix until smooth.
- Let the batter rest for 10 minutes.
- Heat a greased skillet over medium-low heat.
- Scoop 3 to 4 tablespoons of batter into the skillet for each pancake.
- Cook until bubbles form on top, then flip and cook for another 1 to 2 minutes.
- Repeat with remaining batter and serve warm.
