Ingredients

  • 1 cup oat flour

  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice

Instructions

  1. Combine oat flour, baking powder, and salt in a large bowl.
  2. Add the egg, milk, maple syrup, vanilla extract, and lemon juice, and mix until smooth.
  3. Let the batter rest for 10 minutes.
  4. Heat a greased skillet over medium-low heat.
  5. Scoop 3 to 4 tablespoons of batter into the skillet for each pancake.
  6. Cook until bubbles form on top, then flip and cook for another 1 to 2 minutes.
  7. Repeat with remaining batter and serve warm.
