Ingredients

The batter

  • 1 ¾ cups oats
  • 1 ¼ cups milk
  • 3 tablespoons butter
  • 1 large egg
  • 2 tablespoons brown sugar
  • 3 ½ teaspoons baking powder
  • ½ teaspoon salt

For serving

  • to taste butter
  • to taste maple syrup
  • to taste fresh fruit
  • to taste whipped cream

Instructions

  1. Blend 1 ½ cups oats, milk, melted butter, egg, brown sugar, baking powder, and salt until smooth.
  2. Add the remaining ¼ cup oats and let the batter sit for 10 minutes.
  3. Heat a griddle or frying pan over medium-high heat, greasing if desired.
  4. Pour approximately ¼ cup of batter for each pancake onto the griddle.
  5. Flip the pancakes when bubbles form on the first side and brown the second side.
  6. Repeat with the remaining batter to make about 8 pancakes.
  7. Serve hot with butter, maple syrup, fresh fruit, or whipped cream.
