Blender Oatmeal Pancakes

Ingredients

The batter

  • 2 cups old-fashioned oats or quick-cooking oats
  • 1 cup water
  • 1 medium ripe banana, sliced into 1-inch chunks
  • 2 large eggs
  • 2 tablespoons maple syrup
  • 2 tablespoons melted butter
  • 2 ½ teaspoons baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ½ teaspoon fine salt

Optional toppings

  • as desired thinly sliced banana
  • as desired maple syrup
  • as desired almond butter or peanut butter

Instructions

  1. Preheat the electric skillet to 375°F or heat a skillet over medium heat.
  2. Blend all the ingredients until smooth, about 30 to 60 seconds.
  3. If using a non-stick surface, brush it lightly with melted butter.
  4. Scoop ⅓ cup of batter onto the hot surface, leaving space for expansion.
  5. Cook until small bubbles form on the surface, about 2 to 3 minutes.
  6. Flip the pancakes and cook until lightly golden on both sides, 1 to 2 minutes more.
  7. Repeat with the remaining batter, adjusting heat as necessary.
  8. Serve immediately or keep warm in a 200°F oven.
