Ingredients

The batter

  • 2 medium overly ripe bananas
  • 2 cups rolled oats
  • 1 unit egg
  • 1 tsp vanilla
  • 1 tbsp maple syrup
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp allspice
  • ¼ tsp salt
  • 1 cup almond milk

Toppings

  • as needed unit banana coins
  • as needed unit chocolate chips

Instructions

  1. Add all ingredients to a high-powered blender in the listed order.
  2. Blend until smooth, scraping down the sides as needed, for about 20-30 seconds.
  3. Let the batter rest for at least 5 minutes to thicken.
  4. Heat a griddle over medium heat and grease it with butter or nonstick spray.
  5. Pour 1/4 cup of batter onto the griddle, cooking for 2-3 minutes per side, flipping as needed.
  6. Repeat until all batter is used, adding chocolate chips or banana coins as desired.
  7. Enjoy the pancakes and store leftovers in the fridge or freeze.
