Instructions
- Whisk together the dry ingredients in a medium bowl.
- In a large bowl, mash the bananas and then add the eggs and vanilla, whisking until combined.
- Combine the dry ingredients with the wet ingredients and mix until combined.
- Stir in the melted coconut oil until fully incorporated.
- Heat a large skillet over low/medium heat and spray with coconut oil cooking spray.
- Spoon about ⅓ cup of batter onto the skillet and cook for 2-3 minutes on each side until golden brown.
