Ingredients

Dry Ingredients

  • 1 cup ground oat flour
  • ½ cup rolled oats
  • 1 teaspoon baking powder
  • teaspoon salt

Wet Ingredients

  • 2 large eggs
  • 2 medium bananas, mashed (~1 cup mashed)
  • 1 teaspoon vanilla extract
  • 3 tablespoons melted coconut oil
  • optional cup unsweetened almond milk

Instructions

  1. Whisk together the dry ingredients in a medium bowl.
  2. In a large bowl, mash the bananas and then add the eggs and vanilla, whisking until combined.
  3. Combine the dry ingredients with the wet ingredients and mix until combined.
  4. Stir in the melted coconut oil until fully incorporated.
  5. Heat a large skillet over low/medium heat and spray with coconut oil cooking spray.
  6. Spoon about ⅓ cup of batter onto the skillet and cook for 2-3 minutes on each side until golden brown.
