Banana Oat Pancakes

Ingredients

The batter

  • 2 medium Bananas (ripe)
  • 2 large Eggs
  • ½ cup Oat milk (or alternative milk of choice)
  • 1 ⅔ cups Rolled oats
  • 2 tsp Baking powder
  • ½ tsp Cinnamon
  • ½ tsp Vanilla extract
  • ¼ tsp Sea salt

For frying

  • 2 tbsp Avocado oil

Instructions

  1. Blend the bananas, eggs, oat milk, rolled oats, baking powder, cinnamon, vanilla, and salt until smooth.
  2. Heat the avocado oil in a frying pan over medium heat until shimmering.
  3. Pour approximately ¼ cup of batter into the pan for each pancake and fry for 2-3 minutes until lightly browned.
  4. Flip the pancakes and cook for another 2-3 minutes on the other side until golden.
