Ingredients

The batter

  • cups old fashioned rolled oats or quick oats
  • cups mashed banana (about 2 very large bananas)
  • ¼ cup nonfat plain Greek yogurt
  • ¼ cup nonfat milk
  • 3 large eggs
  • 1 tablespoon honey
  • teaspoons baking powder
  • ¾ teaspoon ground cinnamon
  • ½ teaspoon kosher salt
  • ½ teaspoon ground nutmeg

Optional toppings

  • to taste maple syrup
  • to taste butter
  • to taste honey
  • to taste Greek yogurt
  • to taste fresh fruit
  • to taste peanut butter

Instructions

  1. Grind the oats in a blender.
  2. Add the mashed banana, Greek yogurt, milk, eggs, honey, baking powder, cinnamon, salt, and nutmeg.
  3. Blend until smooth and let the batter rest for 10 minutes.
  4. Heat a skillet over medium-low and lightly grease it.
  5. Pour ¼ cup of batter onto the skillet and cook until the edges look dry, then flip and cook for another 1-2 minutes.
  6. Repeat until all batter is used and serve warm with desired toppings.
