Thick & Fluffy Oat Flour Pancakes

Ingredients

Dry ingredients

  • 1 cup gluten free oat flour
  • 2 tbsp coconut sugar
  • 1 tsp baking powder
  • a pinch sea salt

Wet ingredients

  • 1 cup dairy free milk
  • cup unsweetened applesauce
  • 1 tsp vanilla extract

Optional topping

  • 1 apple, cored and chopped
  • 1 tsp coconut oil
  • ¼ tsp ground cinnamon
  • 1 tbsp raisins
  • 1 tbsp chopped pecans
  • to taste pure maple syrup

Instructions

  1. Combine all dry ingredients in a mixing bowl and whisk together.
  2. Add wet ingredients to the dry mixture and whisk until combined; adjust consistency with more milk if needed.
  3. Heat a skillet over medium-high heat and add a teaspoon of oil.
  4. Pour about ⅓ cup of batter for each pancake onto the skillet.
  5. Cook until bubbles form on top and edges look rounded, then flip and cook for another minute or two.
  6. For the optional topping, sauté chopped apple in a skillet with coconut oil and cinnamon until soft, then mix in raisins and pecans.
  7. Serve pancakes topped with the apple mixture and maple syrup.
