Instructions
- Combine all dry ingredients in a mixing bowl and whisk together.
- Add wet ingredients to the dry mixture and whisk until combined; adjust consistency with more milk if needed.
- Heat a skillet over medium-high heat and add a teaspoon of oil.
- Pour about ⅓ cup of batter for each pancake onto the skillet.
- Cook until bubbles form on top and edges look rounded, then flip and cook for another minute or two.
- For the optional topping, sauté chopped apple in a skillet with coconut oil and cinnamon until soft, then mix in raisins and pecans.
- Serve pancakes topped with the apple mixture and maple syrup.
