Gluten Free Apple Pancakes

Instructions
- In a large bowl, combine the flour, salt, baking powder, and cinnamon.
- In a separate bowl, mix the eggs, applesauce, coconut oil, and coconut milk, then add to the dry ingredients and stir.
- Fold in one of the chopped apples.
- In a small skillet, simmer the other chopped apple in maple syrup over medium-low heat until tender.
- Pour pancake batter onto a hot griddle, using about ¼ cup for each pancake.
- Cook until golden brown, then serve topped with the cooked apple and additional maple syrup if desired.
