Ingredients

The pancakes

  • 2 ¼ cups gluten-free flour
  • ¾ tsp salt
  • 1 ½ tsp baking powder
  • 1 tsp cinnamon
  • 3 large eggs
  • cup applesauce
  • ¼ cup melted coconut oil
  • 1 ½ cups coconut milk
  • 2 medium apples, peeled and chopped, divided

The topping

  • 1 tbsp pure maple syrup

Instructions

  1. In a large bowl, combine the flour, salt, baking powder, and cinnamon.
  2. In a separate bowl, mix the eggs, applesauce, coconut oil, and coconut milk, then add to the dry ingredients and stir.
  3. Fold in one of the chopped apples.
  4. In a small skillet, simmer the other chopped apple in maple syrup over medium-low heat until tender.
  5. Pour pancake batter onto a hot griddle, using about ¼ cup for each pancake.
  6. Cook until golden brown, then serve topped with the cooked apple and additional maple syrup if desired.
