Ingredients

Dry Ingredients

  • 1 ½ cups spelt flour
  • 1 tablespoon baking powder
  • 2 teaspoons white granulated sugar
  • ¼ teaspoon salt
  • ¼ teaspoon ground cinnamon

Wet Ingredients

  • 1 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 tablespoons melted butter
  • 1 medium honey crisp apple, shredded

Instructions

  1. Mix the dry ingredients in a medium bowl.
  2. In a measuring cup, combine the milk, egg, vanilla, and melted butter, whisking until blended.
  3. Add the wet mixture to the dry ingredients and stir until just combined, then fold in the shredded apple.
  4. Heat a griddle or skillet over medium heat and brush with butter.
  5. Scoop the batter onto the skillet and cook until bubbles form, then flip and cook until golden brown.
  6. Transfer cooked pancakes to a warm oven and repeat with remaining batter.
  7. Serve with apple slices, pomegranate seeds, and warm maple syrup.
