Apple Cinnamon Pancakes

firm apple, cored and thinly sliced into rounds

Instructions
- Whisk together flour, flax seed, brown sugar, baking powder, cinnamon, and salt in a bowl.
- Whisk in the yogurt, milk, egg, oil, and vanilla.
- Allow the batter to rest for at least 5 minutes, up to 30 minutes.
- Heat a skillet on medium-high and sauté apple slices until browned and tender, then set aside.
- Reduce heat to medium and add two ¼ cup scoops of batter to the skillet, placing a fried apple slice on top of each.
- Cook until bubbles form on the surface, then flip and cook for another minute.
- Remove the pancakes and repeat until all batter is used, adding fat if needed.
- Serve topped with maple syrup and pecans if desired.
