Ingredients

The syrup

  • 1 cup brown sugar
  • 2 cups apple cider
  • 1 stick cinnamon sticks

The pancake

  • 1 large unpeeled apple, thinly sliced
  • 2 tablespoons packed brown sugar
  • ½ teaspoon cinnamon
  • 4 large eggs
  • cup skim milk
  • cup bread flour
  • 2 tablespoons applesauce
  • 1 tablespoon sugar

Instructions

  1. Combine apple cider, brown sugar, and cinnamon sticks in a pot and bring to a boil, then reduce heat and simmer for about 30 minutes until reduced by a third.
  2. Preheat the oven to 350°F (175°C). Mix the sliced apples, brown sugar, and cinnamon in a buttered 9-inch pie plate.
  3. Whisk together the remaining ingredients until just combined and pour over the apples in the pie plate.
  4. Bake for 15-18 minutes until the top is browned and set, then let cool for 5-10 minutes.
  5. Loosen the edges of the pancake with a knife, invert onto a serving platter, and sprinkle with powdered sugar before serving with syrup.
