Ingredients

The pancake

  • 4 tablespoons light butter
  • 4 large eggs
  • cup all-purpose flour
  • cup skim milk
  • ¼ teaspoon table salt

The apple topping

  • 4 medium apples
  • 2 teaspoons cornstarch
  • cup water
  • 2 tablespoons packed brown sugar
  • ½ teaspoon cinnamon
  • ½ teaspoon powdered sugar

Instructions

  1. Preheat the oven to 400°F.
  2. Melt 2 tablespoons of butter in a 9x13 baking dish for 3-5 minutes in the oven.
  3. Whisk the eggs in a bowl, then add flour, milk, and salt, mixing until smooth.
  4. Pour the batter into the melted buttered dish and bake for 20-25 minutes until puffed and golden.
  5. While the pancake bakes, melt the remaining butter in a pan and cook the sliced apples for 4-5 minutes.
  6. Mix cornstarch with water, then add to the apples along with brown sugar and cinnamon, cooking until tender.
  7. Once the pancake is done, top it with the apple mixture, sprinkle with powdered sugar, slice, and serve.
