Ingredients

The pancakes

  • 2 cups whole wheat pastry flour
  • 2 teaspoons baking powder

  • 1 teaspoon apple pie spice

  • 2 large eggs
  • cups milk
  • ¼ cup maple syrup
  • 3 tablespoons unsweetened applesauce
  • 1 teaspoon vanilla extract

The apple topping

  • 2 apples peeled and chopped
  • 2 tablespoons butter or coconut oil
  • 2 tablespoons maple syrup
  • ½ teaspoon cinnamon

Instructions

  1. Mix the dry ingredients in a large bowl and set aside.
  2. Whisk the wet ingredients in a medium bowl until combined.
  3. Combine wet and dry ingredients, mixing gently.
  4. Heat a skillet and pour ¼ cup of batter for each pancake, cooking until golden brown.
  5. For the apple topping, sauté chopped apples with butter, maple syrup, and cinnamon until tender.
  6. Serve pancakes topped with warm sautéed apples and additional maple syrup if desired.
