Ingredients

The Pancakes

  • 1 tablespoon canola oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup diced peeled apple

The Cinnamon Syrup

  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 2 tablespoons all-purpose Gold Medal flour
  • ½ teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup water

Instructions

  1. Whisk together the dry ingredients for the pancakes in a medium bowl.
  2. In another bowl, whisk together the wet ingredients.
  3. Combine the wet and dry ingredients, mixing until just combined, then fold in the diced apples.
  4. Heat a griddle or skillet over medium heat, spray with cooking spray, and pour batter to form pancakes.
  5. Cook until bubbles form, then flip and cook until lightly browned.
  6. For the syrup, mix dry ingredients in a saucepan, add water and vanilla, then bring to a boil until thickened.
