Ingredients

The pancakes

  • ¾ cups all purpose flour
  • ¾ cups whole wheat flour
  • teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon honey
  • 3 tablespoons melted butter
  • cups milk
  • 1 large egg

The apples

  • 2 apples
  • ¼ cup brown sugar
  • ¼ cup flour
  • ½ teaspoon cinnamon

Toppings

  • maple syrup
  • chopped pecans
  • powdered sugar
  • vanilla yogurt
  • honey

Instructions

  1. Mix the flours, baking powder, and salt in a small bowl.
  2. In another bowl, whisk together honey, melted butter, milk, and egg.
  3. Combine both mixtures, stirring until mostly smooth.
  4. Core and slice the apples thinly, then dust with a mixture of brown sugar, flour, and cinnamon.
  5. Heat a skillet with a small pat of butter, add the apples, and let them soften.
  6. Pour pancake batter over the softened apples and cook until bubbles form, then flip and cook until done.
  7. Serve warm with desired toppings.
