Whole-Wheat Oven Pancake

Instructions
- Preheat the oven to 375°F.
- Core and slice the apple and pear into pieces between ¼” and ½” thick.
- In a blender, combine the eggs, vanilla, honey, flour, baking powder, and salt, then blend until smooth.
- Heat the butter in an ovenproof sauté pan over medium heat and add the sliced fruits, cooking for about 5 minutes until soft.
- Sprinkle the fruit with cinnamon and the remaining teaspoon of honey, then toss to combine.
- Spread the fruit evenly across the bottom of the pan and pour the batter over the top.
- Cook over medium-low heat for about 4 - 5 minutes until the bottom is set.
- Transfer the pan to the oven and bake until the top is golden brown, about 6 - 8 minutes.
- Invert the pancake onto a large round platter and slice to serve.
