Instructions
- Whisk together the whole wheat flour, all-purpose flour, and other dry ingredients in a large bowl to make the dry pancake mix.
- Store the dry mix in an airtight container.
- In a medium bowl, combine ¾ cup of the dry pancake mix with milk, egg, baking powder, and olive oil. Whisk together and add water to achieve desired consistency.
- Preheat a skillet over medium-high heat and pour in pancake batter ¼ cup at a time.
- Cook until the edges set and the bottom is lightly browned, about 3 to 4 minutes.
- Flip the pancakes and cook the other side until browned, about 2 to 3 minutes.
- Transfer cooked pancakes to a plate and repeat with remaining batter.
- Serve with butter and maple syrup or with whipped cream and strawberries.
