Ingredients

Dry Pancake Mix

  • 3 cups whole wheat flour
  • 1 cup all-purpose flour
  • ½ cup wheat germ and/or powdered milk, corn meal, bran
  • ¼ cup buckwheat flour and/or potato flour, oat flour, coconut flour

Pancake Ingredients

  • ¾ cup dry pancake mix
  • ½ cup milk
  • 1 unit egg
  • 1 teaspoon baking powder
  • 1 teaspoon olive oil
  • as needed unit water

For Serving

  • to taste unit butter
  • to taste unit maple syrup or whipped cream and strawberries

Instructions

  1. Whisk together the whole wheat flour, all-purpose flour, and other dry ingredients in a large bowl to make the dry pancake mix.
  2. Store the dry mix in an airtight container.
  3. In a medium bowl, combine ¾ cup of the dry pancake mix with milk, egg, baking powder, and olive oil. Whisk together and add water to achieve desired consistency.
  4. Preheat a skillet over medium-high heat and pour in pancake batter ¼ cup at a time.
  5. Cook until the edges set and the bottom is lightly browned, about 3 to 4 minutes.
  6. Flip the pancakes and cook the other side until browned, about 2 to 3 minutes.
  7. Transfer cooked pancakes to a plate and repeat with remaining batter.
  8. Serve with butter and maple syrup or with whipped cream and strawberries.
