Ingredients

Base Batter Ingredients

  • 1.5 cups white whole wheat flour

  • 2 large eggs
  • 1 cup unsweetened almond milk
  • 2 tablespoons melted coconut oil

  • 1.5 cups grated potato
  • ½ cup minced green onion
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon smoked paprika
  • 1.5 cups grated apples
  • 1 teaspoon ground cinnamon
  • 1 cup pumpkin puree
  • 2 tablespoons maple syrup
  • 1 teaspoon pumpkin pie spice
  • 2 tablespoons lemon zest
  • ½ cup ricotta cheese
  • 1 teaspoon almond extract
  • 2 tablespoons honey
  • ¼ cup unsweetened cocoa powder
  • cup chocolate chips
  • ¼ cup maple syrup

Instructions

  1. Mix the base dry ingredients in a medium bowl.
  2. In a separate bowl, whisk the eggs and add almond milk and any additional wet ingredients for your chosen flavor.
  3. Combine the wet and dry ingredients, then mix in melted coconut oil.
  4. Heat a skillet over low/medium heat and spray with cooking spray.
  5. Use a 1/3 cup scoop to pour batter into the skillet and cook until bubbles form on top, then flip and cook for another 2-3 minutes.
  6. Repeat until all batter is used and serve with your favorite toppings.
