Ingredients

Dry Ingredients

  • 1.5 cups white whole wheat flour
  • 2 teaspoons baking powder
  • 1/8 teaspoon salt
  • 1/4 cup unsweetened cocoa powder
  • 1/3 cup chocolate chips

Wet Ingredients

  • 1/2 cup mashed banana
  • 2 large eggs
  • 1.25 cups unsweetened almond milk
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted coconut oil

Instructions

  1. Mix the dry ingredients in a medium bowl.
  2. In a separate bowl, whisk the eggs and add the remaining dry ingredients.
  3. Combine the dry ingredients with the wet ingredients and mix until well combined.
  4. Add the melted coconut oil and mix again.
  5. Heat a large skillet over low heat and spray with non-stick cooking spray.
  6. Scoop pancake batter into the skillet and cook for 2-3 minutes on each side, flipping when bubbles form.
  7. Repeat until all batter is used and serve with your favorite toppings.
