Instructions
- 1. Combine dry ingredients in a medium bowl and whisk until mixed.
- 2. In a large bowl, mash the bananas, then add eggs and vanilla, whisking until combined.
- 3. Mix the dry ingredients into the wet ingredients until combined.
- 4. Stir in the melted coconut oil until fully incorporated.
- 5. Heat a large skillet over low/medium heat and spray with coconut oil cooking spray.
- 6. Spoon about ⅓ cup of batter onto the skillet and cook for 2-3 minutes on each side.
- 7. Repeat until all batter is cooked and serve with toppings like maple syrup and more chocolate chips.
