Ingredients

Dry Ingredients

  • 1 cup ground oat flour
  • ½ cup rolled oats
  • 1 teaspoon baking powder
  • teaspoon salt
  • ½ cup dark chocolate chips

Wet Ingredients

  • 2 large eggs
  • 2 medium bananas, mashed (~1 cup mashed)
  • 1 teaspoon vanilla extract
  • 3 tablespoons melted coconut oil

Instructions

  1. 1. Combine dry ingredients in a medium bowl and whisk until mixed.
  2. 2. In a large bowl, mash the bananas, then add eggs and vanilla, whisking until combined.
  3. 3. Mix the dry ingredients into the wet ingredients until combined.
  4. 4. Stir in the melted coconut oil until fully incorporated.
  5. 5. Heat a large skillet over low/medium heat and spray with coconut oil cooking spray.
  6. 6. Spoon about ⅓ cup of batter onto the skillet and cook for 2-3 minutes on each side.
  7. 7. Repeat until all batter is cooked and serve with toppings like maple syrup and more chocolate chips.
