Instructions
- In a large bowl, whisk together the dry ingredients.
- In a separate bowl, mash the banana and mix in the wet ingredients.
- Combine the wet and dry mixtures, folding in the chocolate chips until well mixed.
- Heat a skillet and lightly grease it with coconut oil.
- Pour ¼ to ⅓ cup of batter onto the skillet and cook until bubbles form, then flip and cook until browned.
- Keep cooked pancakes warm in the oven while cooking the remaining batter.
- Serve with optional toppings.
