Ingredients

The pancakes

  • ¾ cup gluten-free oat flour
  • ¾ cup gluten-free all-purpose flour
  • ¼ cup almond flour
  • cup cocoa powder
  • 2 tsp baking powder
  • ½ tsp sea salt
  • 1 medium ripe banana
  • Tbsp melted coconut oil
  • 1 tsp vanilla extract (optional)
  • Tbsp maple syrup
  • cup non-dairy milk
  • ¼ cup vegan dark or semi-sweet chocolate chips

For serving (optional)

  • Vegan butter or Nut Butter
  • Unsweetened coconut or Coconut Butter
  • Sliced bananas
  • Maple syrup

Instructions

  1. In a large bowl, whisk together the dry ingredients.
  2. In a separate bowl, mash the banana and mix in the wet ingredients.
  3. Combine the wet and dry mixtures, folding in the chocolate chips until well mixed.
  4. Heat a skillet and lightly grease it with coconut oil.
  5. Pour ¼ to ⅓ cup of batter onto the skillet and cook until bubbles form, then flip and cook until browned.
  6. Keep cooked pancakes warm in the oven while cooking the remaining batter.
  7. Serve with optional toppings.
