Ingredients

The pancakes

  • 2 cups gluten-free oat flour
  • cups gluten-free all-purpose flour
  • ½ cup almond flour
  • Tbsp baking powder
  • 1 tsp sea salt
  • tsp ground cinnamon
  • ¼ tsp ground ginger (optional)
  • ¼ tsp ground nutmeg (optional)
  • 2 medium ripe bananas
  • 3 Tbsp melted coconut oil
  • Tbsp vanilla extract
  • Tbsp maple syrup
  • cups non-dairy milk
  • ¾ cup chopped raw walnuts
  • ¼ cup gluten-free rolled oats

For serving (optional)

  • Vegan butter or nut butter
  • Granola
  • Large flake or desiccated coconut
  • Sliced bananas
  • Maple syrup

Instructions

  1. Combine the dry ingredients in a large bowl and whisk together.
  2. In a separate bowl, mash the bananas and mix in the wet ingredients.
  3. Combine the wet and dry ingredients, then fold in the walnuts and oats.
  4. Heat a skillet and lightly grease it with coconut oil or vegan butter.
  5. Pour ¼ to ⅓ cup of batter onto the skillet and cook until bubbles form, then flip and cook until browned.
  6. Keep cooked pancakes warm in an oven while cooking the remaining batter.
  7. Serve with your choice of toppings.
