Instructions
- Combine flaxseed, water, and banana in a bowl and mash until mixed; let sit for 5 minutes.
- Add olive oil, vanilla, and almond milk, then whisk together.
- Sprinkle flour, baking powder, baking soda, cinnamon, nutmeg, and salt over the mixture; stir until combined but lumpy.
- Heat a nonstick skillet to medium and brush with olive oil.
- Pour ⅓ cup of batter onto the skillet and spread slightly; cook until bubbles appear, about 1½ minutes per side.
- Serve with maple syrup, sliced bananas, and pecans if desired.
