Instructions
- Mash the banana in a mixing bowl.
- Add oil, maple syrup, baking powder, and salt, then whisk to combine.
- Stir in non-dairy milk, adjusting the quantity as needed.
- Add oat flour, gluten-free flour, and almond flour, and gently mix until combined.
- Heat a skillet over medium heat and lightly oil it.
- Pour 1/4 to 1/3 cup of batter onto the skillet and cook until bubbles form on the surface.
- Flip the pancakes and cook until browned on the other side.
- Transfer cooked pancakes to a warm oven and repeat until all batter is used.
- Serve with toppings like fruit or maple syrup.
