  • ¼ cup almond flour
  • ¼ cup vegan dark chocolate chips or fresh/frozen fruit

Instructions

  1. Mash the banana in a mixing bowl.
  2. Add oil, maple syrup, baking powder, and salt, then whisk to combine.
  3. Stir in non-dairy milk, adjusting the quantity as needed.
  4. Add oat flour, gluten-free flour, and almond flour, and gently mix until combined.
  5. Heat a skillet over medium heat and lightly oil it.
  6. Pour 1/4 to 1/3 cup of batter onto the skillet and cook until bubbles form on the surface.
  7. Flip the pancakes and cook until browned on the other side.
  8. Transfer cooked pancakes to a warm oven and repeat until all batter is used.
  9. Serve with toppings like fruit or maple syrup.
