Instructions
- Blend 2½ cups of rolled oats in a high-powered blender or food processor until you have 2 cups of fine oat flour, or use pre-packaged oat flour.
- In a medium bowl, whisk together the oat flour, baking powder, and salt.
- In the blender, combine the bananas, almond milk, coconut oil, and vanilla extract, and process until smooth.
- Add the wet ingredients to the dry ingredients and stir to combine.
- Heat a griddle pan over medium-high heat, then lower to medium-low.
- Pour about ¼ cup of batter for each pancake onto the griddle, aiming for 12 pancakes total.
- Cook for about 2 minutes on each side, flipping when the bottoms are nicely browned.
- Serve warm with toppings like maple syrup or sliced bananas.
