Ingredients

The batter

  • 1 cup unsweetened almond milk
  • ¼ cup egg whites
  • ½ cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1 cup white whole wheat flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • a pinch salt

The toppings

  • ¼ cup chocolate chips

Instructions

  1. Blend all ingredients except for the chocolate chips until you have a thick, pourable batter.
  2. Heat a non-stick skillet over medium-high heat and lightly coat it with butter or cooking spray.
  3. Pour 2 tablespoons of batter for each pancake into the skillet, fitting about four pancakes at a time.
  4. Sprinkle chocolate chips on top as the pancakes begin to set.
  5. Once bubbles form on the surface, flip the pancakes and cook until golden brown.
  6. Repeat until all batter is used and serve.
