Ingredients

The pancake batter

  • ½ cup white whole wheat flour
  • ½ cup unbleached all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon kosher salt
  • ½ cup unsweetened applesauce
  • 1 cup unsweetened almond milk (or soy or low-fat dairy milk)
  • 3 large egg whites
  • 2 teaspoons canola or vegetable oil
  • 1 teaspoon pure vanilla extract
  • ¼ cup mini chocolate chips

For cooking and serving

  • as needed cooking spray or oil mister
  • to taste honey or pure maple syrup

Instructions

  1. Whisk together the flours, baking powder, and salt in a large bowl.
  2. In a separate bowl, combine the applesauce, almond milk, egg whites, oil, and vanilla.
  3. Stir the flour mixture into the applesauce mixture until just moist, without overmixing.
  4. Heat a nonstick griddle over medium-low heat and lightly spray with oil.
  5. Scoop out ¼ cup of pancake batter for each pancake and sprinkle 1 teaspoon of chocolate chips on top.
  6. Cook until the pancakes start to bubble and the edges set, about 1½ minutes, then flip and cook until golden, another 1½ minutes.
  7. Repeat with the remaining batter.
  8. Serve 2 pancakes on each plate and top with honey or maple syrup if desired.
