Ingredients

Pancake Batter

  • ½ cup spelt flour
  • ½ tsp cinnamon
  • a tiny pinch sea salt
  • 1 tsp baking powder
  • ½ cup unsweetened almond milk

Syrup and Filling

  • to taste pure maple syrup
  • to taste peanut butter
  • to taste jam
  • to taste unsweetened coconut
  • to taste cacao nibs
  • 1 sliced banana
  • to taste blueberries
  • to taste raspberries

Instructions

  1. Mix all dry ingredients together the night before and store in a container.
  2. In the morning, heat a skillet on medium heat.
  3. Add almond milk to the dry ingredients and stir well.
  4. Spray the skillet with non-stick oil.
  5. Spoon the batter onto the skillet over medium-low heat.
  6. Flip pancakes when bubbles form on the surface and cook the other side.
  7. Layer pancakes with sliced banana, peanut butter, jam, and other toppings as desired.
