Ingredients

The pancakes

  • 1 ¼ cup oat flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 2 tbsp cocoa powder
  • ½ tsp salt
  • 1 small banana
  • 1 ½ tbsp maple syrup
  • 1 cup almond milk
  • 1 ½ tbsp peanut butter
  • 1 tsp cinnamon
  • ¼ tsp nutmeg

Raspberry Compote

  • 1 ½ cup raspberries
  • 3 tsp lemon juice
  • 3 tbsp maple syrup

Instructions

  1. Prepare the raspberry compote by heating all its ingredients in a pan, bringing to a boil, then simmering for about 10 minutes.
  2. In a blender, combine the pancake ingredients and blend until just mixed.
  3. Heat a griddle or skillet over medium heat and grease it.
  4. Pour ¼ cup of pancake batter onto the griddle and cook until bubbles form, then flip and cook until done.
  5. Repeat for remaining batter and serve pancakes hot with raspberry compote on top.
