Raspberry Compote

Instructions
- Prepare the raspberry compote by heating all its ingredients in a pan, bringing to a boil, then simmering for about 10 minutes.
- In a blender, combine the pancake ingredients and blend until just mixed.
- Heat a griddle or skillet over medium heat and grease it.
- Pour ¼ cup of pancake batter onto the griddle and cook until bubbles form, then flip and cook until done.
- Repeat for remaining batter and serve pancakes hot with raspberry compote on top.
