Easy Fluffy Pancakes

Instructions
- 1. Mix the dry ingredients in a bowl and set aside.
- 2. Make brown butter by melting it in a skillet over medium/low heat until golden brown.
- 3. In another bowl, whisk the egg yolks, then add brown sugar and vanilla extract, mixing until combined.
- 4. Add almond milk to the egg mixture and whisk together.
- 5. Beat the egg whites in a separate bowl until stiff peaks form.
- 6. Combine the wet and dry ingredients, then gently fold in the beaten egg whites.
- 7. Heat a non-stick skillet and add butter, then pour in about ⅓ cup of batter for each pancake.
- 8. Cook for 2-3 minutes on each side until golden brown and fluffy.
- 9. Serve with maple syrup and toppings of your choice.
