Ingredients

  • cups all-purpose flour
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • 3 tablespoons unsalted butter
  • 2 large eggs
  • 3 tablespoons brown sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup + 2 tablespoons unsweetened almond milk

Instructions

  1. 1. Mix the dry ingredients in a bowl and set aside.
  2. 2. Make brown butter by melting it in a skillet over medium/low heat until golden brown.
  3. 3. In another bowl, whisk the egg yolks, then add brown sugar and vanilla extract, mixing until combined.
  4. 4. Add almond milk to the egg mixture and whisk together.
  5. 5. Beat the egg whites in a separate bowl until stiff peaks form.
  6. 6. Combine the wet and dry ingredients, then gently fold in the beaten egg whites.
  7. 7. Heat a non-stick skillet and add butter, then pour in about ⅓ cup of batter for each pancake.
  8. 8. Cook for 2-3 minutes on each side until golden brown and fluffy.
  9. 9. Serve with maple syrup and toppings of your choice.
