Ingredients

The batter

  • 2 cups almond flour
  • ¼ teaspoon salt
  • 2 tablespoons maple syrup
  • ½ teaspoon vanilla extract
  • 4 large eggs
  • ½ cup unsweetened almond milk or any milk

For cooking

  • as needed coconut oil or butter

Optional

  • to taste cinnamon

Instructions

  1. Mix the almond flour and salt in a large bowl.
  2. Add the maple syrup, vanilla extract, eggs, and milk, then mix until combined.
  3. Let the batter rest for 5 minutes to thicken.
  4. Heat oil in a non-stick pan over medium heat.
  5. Pour ¼ cup portions of the batter into the pan and cover.
  6. Cook for 2-3 minutes, then flip and cook for another 2 minutes.
  7. Repeat until all batter is used, then serve immediately.
