Instructions
- Preheat a skillet over medium-low heat.
- In a large bowl, whisk together the almond flour, eggs, maple syrup, olive oil, baking powder, vanilla, and salt.
- Thin the batter with 1 to 2 tablespoons of almond milk or water as needed.
- Grease the skillet with butter or spray oil.
- Pour a scant 1/4 cup of batter into the skillet and spread it into a round shape.
- Cook until bubbles form around the edges (about 3 minutes), then flip and cook for another 2 to 3 minutes.
- Repeat with the remaining batter until all pancakes are cooked.
- Serve warm with your favorite toppings.
