Ingredients

  • 1 cup blanched almond flour
  • 2 large eggs
  • 2 tablespoons maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • ΒΌ teaspoon fine sea salt
  • 1 to 2 tablespoons almond milk or water

Instructions

  1. Preheat a skillet over medium-low heat.
  2. In a large bowl, whisk together the almond flour, eggs, maple syrup, olive oil, baking powder, vanilla, and salt.
  3. Thin the batter with 1 to 2 tablespoons of almond milk or water as needed.
  4. Grease the skillet with butter or spray oil.
  5. Pour a scant 1/4 cup of batter into the skillet and spread it into a round shape.
  6. Cook until bubbles form around the edges (about 3 minutes), then flip and cook for another 2 to 3 minutes.
  7. Repeat with the remaining batter until all pancakes are cooked.
  8. Serve warm with your favorite toppings.
