Ingredients

  • 1 cup almond flour
  • 2 tablespoons tapioca starch
  • 1 teaspoon baking powder
  • a pinch salt
  • cup unsweetened almond milk
  • 1 large egg
  • 1 tablespoon sugar-free maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. 1. Whisk together the almond flour, tapioca flour, baking powder, and salt in a large bowl.
  2. 2. In a separate bowl, stir together the almond milk, egg, maple syrup, and vanilla extract.
  3. 3. Combine the wet ingredients with the dry ingredients and stir gently until mixed.
  4. 4. Heat a medium non-stick skillet over medium heat and coat with butter or coconut oil.
  5. 5. Scoop ¼ cup of batter into the skillet to form pancakes and cook until edges puff and the bottom is golden brown.
  6. 6. Flip the pancakes and cook until done.
  7. 7. Serve with your favorite toppings.
