Instructions
- 1. Whisk together the almond flour, tapioca flour, baking powder, and salt in a large bowl.
- 2. In a separate bowl, stir together the almond milk, egg, maple syrup, and vanilla extract.
- 3. Combine the wet ingredients with the dry ingredients and stir gently until mixed.
- 4. Heat a medium non-stick skillet over medium heat and coat with butter or coconut oil.
- 5. Scoop ¼ cup of batter into the skillet to form pancakes and cook until edges puff and the bottom is golden brown.
- 6. Flip the pancakes and cook until done.
- 7. Serve with your favorite toppings.
