Almond Flour Banana Pancakes

Ingredients

  • 1 cup almond flour
  • 3 tablespoons tapioca flour
  • teaspoons baking powder
  • pinch kosher salt
  • ¼ cup unsweetened almond milk
  • 1 large Happy Egg Free Range egg
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 1 banana mashed and chopped

Instructions

  1. Combine almond flour, tapioca flour, baking powder, and salt in a large bowl and whisk together.
  2. Add almond milk, egg, maple syrup, banana, and vanilla extract to the bowl and stir until combined.
  3. Heat a non-stick skillet over medium heat and coat with butter or coconut oil.
  4. Scoop ¼ cup of pancake batter into the skillet to form pancakes.
  5. Cook for 2-3 minutes until edges puff and bottoms are golden brown, then flip and cook for another 2 minutes.
  6. Repeat until all batter is used and serve.
