Instructions
- Combine almond flour, tapioca flour, baking powder, and salt in a large bowl and whisk together.
- Add almond milk, egg, maple syrup, banana, and vanilla extract to the bowl and stir until combined.
- Heat a non-stick skillet over medium heat and coat with butter or coconut oil.
- Scoop ¼ cup of pancake batter into the skillet to form pancakes.
- Cook for 2-3 minutes until edges puff and bottoms are golden brown, then flip and cook for another 2 minutes.
- Repeat until all batter is used and serve.
