Ingredients

The batter

  • 1 cup almond flour
  • 1 tsp baking powder
  • 4 large eggs
  • 1 medium banana
  • ¼ cup unsweetened almond milk
  • 1 tsp vanilla extract

The toppings

  • ¾ cup blueberries

Instructions

  1. Mix all ingredients except blueberries in a large bowl until smooth.
  2. Heat a skillet over medium heat and grease it.
  3. Pour about ¼ cup of batter onto the skillet and sprinkle with blueberries.
  4. Cook for 2-3 minutes on each side until golden brown.
  5. Serve with maple syrup or powdered sugar if desired.
