Ingredients

  • 1 banana mashed
  • 2 tablespoons maple syrup
  • 2 tablespoons ground flax seed
  • 6 tablespoons water
  • ¾ cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons coconut oil
  • 2 cups white whole wheat flour
  • 2 teaspoons baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 cup fresh blueberries

Instructions

  1. Mix the mashed banana, maple syrup, flax eggs, almond milk, vanilla extract, and melted coconut oil in a large bowl.
  2. Add the dry ingredients to the bowl and stir to combine.
  3. Gently fold in the blueberries.
  4. Heat a skillet over medium-high heat and grease it with cooking spray or coconut oil.
  5. Pour about ⅓ cup of batter onto the skillet and flatten it slightly.
  6. Cook until bubbles form on top and edges firm up, about 2-3 minutes, then flip and cook for another 1-2 minutes.
  7. Serve with maple syrup.
