Instructions
- Mix the mashed banana, maple syrup, flax eggs, almond milk, vanilla extract, and melted coconut oil in a large bowl.
- Add the dry ingredients to the bowl and stir to combine.
- Gently fold in the blueberries.
- Heat a skillet over medium-high heat and grease it with cooking spray or coconut oil.
- Pour about ⅓ cup of batter onto the skillet and flatten it slightly.
- Cook until bubbles form on top and edges firm up, about 2-3 minutes, then flip and cook for another 1-2 minutes.
- Serve with maple syrup.
