Ingredients

The batter

  • ½ cup almond flour
  • 2 tablespoons coconut flour
  • 1 teaspoon cinnamon
  • ½ teaspoon baking powder
  • 1-2 tablespoons allulose
  • 3 large eggs
  • ¼ cup milk of choice

The mix-ins

  • 1 cup blueberries

Instructions

  1. Mix all wet and dry ingredients except blueberries until a thick batter forms.
  2. Fold in the blueberries and let the batter sit for 5-10 minutes to thicken.
  3. Preheat a non-stick skillet over medium heat and grease it.
  4. Pour ¼ cup portions of batter into the skillet and cover.
  5. Cook for 2-3 minutes until the edges are golden, then flip and cook until done.
  6. Serve immediately or cool for later storage.
