Instructions
- Mix all wet and dry ingredients except blueberries until a thick batter forms.
- Fold in the blueberries and let the batter sit for 5-10 minutes to thicken.
- Preheat a non-stick skillet over medium heat and grease it.
- Pour ¼ cup portions of batter into the skillet and cover.
- Cook for 2-3 minutes until the edges are golden, then flip and cook until done.
- Serve immediately or cool for later storage.
