Paleo Blueberry Pancakes

Ingredients

  • ½ cup tapioca flour
  • ¼ cup coconut flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsweetened apple sauce
  • 1 tsp vanilla
  • 2 tbsp coconut oil or grass-fed butter
  • 3 units eggs
  • ½ cup freeze dried blueberries

Instructions

  1. Combine all dry ingredients in a mixing bowl.
  2. Add wet ingredients and whisk until smooth, then fold in the blueberries.
  3. Heat a griddle or pan over medium heat and grease with coconut oil or butter.
  4. Scoop batter onto the pan, shaping into circles.
  5. Flip pancakes when they bubble and the bottom is browned.
  6. Keep pancakes warm in a low oven until all are cooked.
  7. Serve with your favorite toppings.
