Instructions
- Combine all dry ingredients in a mixing bowl.
- Add wet ingredients and whisk until smooth, then fold in the blueberries.
- Heat a griddle or pan over medium heat and grease with coconut oil or butter.
- Scoop batter onto the pan, shaping into circles.
- Flip pancakes when they bubble and the bottom is browned.
- Keep pancakes warm in a low oven until all are cooked.
- Serve with your favorite toppings.
